This recipe was originally published in March 2018. It has been updated for content and photos.

A few weeks ago I made these Easy Shrimp Tacos and created this Asian inspired salsa to go with it. The tacos were super delicious. But the green salsa stole the show.

So much so that I decided to create it's very own recipe. This is the best salsa I've ever had.

With the perfect amount of heat from the peppers, and that tinge of umami flavor from the secret ingredient, this stuff is GOOD guys. I absolutely love this salsa on the sous vide carne asada and this jaiba ceviche!

The secret ingredient is FISH SAUCE guys. Like you probably didn't already know given my love of the stuff.

For recipes like this where we add fish sauce straight in the salsa, you want to be sure to use a good quality fish sauce. My favorite is Red Boat 40, Buy it HERE (affiliate link).

And for that leftover fish sauce, check out these 20+ ways to use fish sauce!

The remaining ingredients are included in the recipe card at the bottom of the post.

Serving Options

This salsa is incredibly versatile and can be used in so many different dishes. Below are just some ideas, but go wild!

  • These Easy Shrimp Tacos just scream for this salsa, and are what prompted me to create it in the first place;
  • It would also be great on these Grilled Salmon Tacos;
  • You can just use it as a dip for tortilla chips;
  • Try it with this Slow Cooker Carnitas or these Pork Belly Tacos;
  • It could be very good with these Thai inspired Baked Chicken Wings;
  • It's really awesome over simple grilled chicken, beef, pork or seafood - it's very versatile!

Expert Tips

  1. If you'd like less heat in the salsa, remove the seeds from the jalapeno. For more heat add another jalapeno or a Thai chili;
  2. Use a food processor for the best results - a blender will give it too much of a pureed consistency;
  3. Add additional salt to taste if desired;
  4. If the salsa is too thick, thin it with a couple tablespoons of water;
  5. The recipe can easily be doubled or tripled.

Storing Options

This salsa will last about a week in a covered container in the fridge.

Freezing options

You can freeze salsa in an airtight container or a freezer bag for up to 3 months. Thaw in the fridge overnight and enjoy!

    hey, nice recipe. Mine came out a bit thin. Suggestions on how to thicken without losing the bright flavor?

    • Danielle

      Hmmmm, I'm wondering why it came out thin. I'm wondering if you could strain it just a touch to get rid of some of the extra liquid? I would say add another half a tomatillo, but they can contain water too, so it might not help. You might try making it first without the lime juice or fish sauce, straining it if there is any excess liquid, then add the lime juice and fish sauce in. That may help keep the flavor while thickening it up a bit. Let me know if either of those work out!

FAQs

What's the difference between salsa verde and tomatillo salsa? ›

Salsa verde, or green salsa, is growing in popularity as more people are willing to try different salsa beyond the common salsa roja. Instead of red tomatoes, salsa verde uses tomatillos. Tomatillos are closely related to tomatoes, but it is important to know that they are not simply unripe or baby tomatoes.

Should you peel tomatillos for salsa? ›

Prep the tomatillos: Remove the papery husks from the tomatillos and rinse well. Cut the tomatillos in half and place cut side down on a foil-lined baking sheet. Add a few garlic cloves in their skin (if using).

How do you get the bitter taste out of tomatillo salsa? ›

Tomatillos taste sour with a bit of bitterness. To cut through the bitterness put them with something that's sweet, for example mangoes, honey or sugar. Lime juice, or vinegar (red or white) cuts through the sourness.

How do you keep tomatillo salsa from congealing? ›

Easy Red or Green Salsa

Cook until the tomatoes or tomatillos are easily pierced with a fork. Set aside to cool in the water. (If using tomatillos, you must let the water cool completely or else the salsa will congeal.)

What kind of salsa do most Mexican restaurants use? ›

Fresh tomatoes, not canned, star in this recipe. In Mexico, it is known as salsa roja (red sauce)or salsa de mesa (table sauce). And just like in the U.S., it is served in every restaurant before your meal with tortilla chips.

Do you use yellow or white onions in salsa verde? ›

Minced onion - We prefer white onion for our salsa verde, but yellow or red onion will work as well. Ripe Avocado - Just for a garnish, really, unless you want to blend it in for more of a creamy salsa verde.

Is it better to boil or roast tomatillos for salsa? ›

Having made both boiled and roasted versions, and having tried them side by side, I sit firmly in the Boiling-is-Best side of things. Roasted tomatillos are good, but they lack the fresh greenness of flavour and the bright tanginess that the boiled ones have. Roasted tomatillos taste, well, over-cooked and smoky.

Why do you need two tomatillos? ›

Tomatillos are not self-fertile so multiple plants are needed for proper fruit set.

What is the sticky stuff on tomatillos? ›

If any insects get through the papery husk, the tomatillo's first line of defense, they encounter the sticky film. This film contains chemical compounds called withanolides that insects find bad tasting. So voila, they leave the tomatillos alone! Luckily for us tomatillo eaters, the sticky film rinses off quite easily.

Why does my tomatillo salsa taste sour? ›

Raw tomatillos can be acidic, you want your finished salsa to be tangy, but not mouth-puckeringly sour. If your finished salsa is too sour, add more sugar, ¼ teaspoon at a time until the flavor is more balanced.

Can I use canned tomatillos instead of fresh? ›

You might find canned tomatillos, but they won't substitute well in recipes that call for fresh ones. HOW TO STORE In a paper bag in the refrigerator for up to a month. HOW TO PREPARE Remove the husk by pulling from the bottom of the tomatillo belly up to where it attaches at the stem.

Why does my salsa taste bland? ›

Blandness usually comes from lack of seasoning. When you prepare a dish like spaghetti sauce you want to season as you go, not just at the end. Salt enhances the flavor of foods as well as performs some important functions during cooking, like drawing moisture out of ingredients and intensifying their flavor.

Why is my tomatillo salsa gelatinous? ›

Why Does Tomatillo Salsa Gel? It's hard to resist diving into a warm bowl of salsa but if for some reason you do end up refrigerating salsa verde, don't be surprised if you notice the tomatillo's natural pectin at work, resulting in a thicker consistency when cooled.

What can I add to salsa for flavor? ›

What can I add to salsa for more flavor?
  1. Lime or lemon for a zip of citrus.
  2. Cilantro for a pleasantly herbaceous tang.
  3. Onions because you know everything's better with onions.
  4. Roasted tomatoes, peppers, or garlic because roasting anything provides a smoky flavor that we love.

Does adding vinegar to salsa make it last longer? ›

Acidic Ingredients

The acid ingredients in salsa help preserve it. You must add acid to canned salsa because the natural acidity may not be high enough. Commonly used acids are vinegar and bottled lemon juice. Lemon juice is more acidic than vinegar and has less effect on flavor.

Is salsa verde made from tomatillos? ›

Try this homemade salsa verde recipe once, and you'll never get the store-bought kind again. It calls for a short list of fresh ingredients: tomatillos, serrano chiles, garlic, onion, cilantro, and lime.

Is the tomatillo salsa spicy? ›

It's a tad bit spicy and incredibly delicious. It's one of the most used dried peppers in Mexican cooking, principally in salsas and we ate it every single day when we were visiting Mexico City!

Can you substitute green tomatoes for tomatillos in salsa verde? ›

When replacing green tomatoes for tomatillos, check for taste during preparation and cooking, then adjust as needed. Some recipes may need more lime juice to add acidity, others more or less salt.

Do tomatillos and green tomatoes taste the same? ›

Tomatillos have a slightly more acidic, slightly less sweet flavor than ripe and unripe tomatoes. Overall, the flavor is more vegetal and bright, and the interior texture is denser and less watery. Prepping a tomatillo is pretty straight forward. The husks can be easily removed with your hands and discarded.
